Crema

Ingredients

  • 1 cup sour cream
  • 1 cup heavy cream
  • 1 teaspoon kosher salt
  • 1 tablespoon freshly squeezed lime juice

Preparation

Whisk the sour cream and heavy cream together in a bowl, then add the salt and the lime juice, and whisk again. Cover the bowl, and allow it to sit at room temperature for a minimum of 2 hours and ideally overnight. It will thicken nicely. Use right away, or transfer to a jar and store in the refrigerator until ready to use.

White Garlic Pizza Sauce

Ingredients

  • 2 Tb unsalted butter
  • 4 cloves garlic minced
  • 3 Tb all purpose flour
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt
  • 1/4 tsp dried oregano
  • 1 C milk
  • 1/2 C Parmesan cheese

Instructions

  • Melt butter in a small saucepan over medium heat. Add garlic, cooking for 30 seconds before whisking in flour, pepper, salt and oregano. Whisk to combing well. Slowly add milk, whisking until well combined. Continue whisking occasionally until desired thickness is reached. Remove from heat, stir in cheese until smooth.
  • Use immediately or cover and chill until ready to use.
